BBQ & Bacon Chicken


BBQ & Bacon Chicken

Serves 4

A great weeknight BBQ chicken recipe with some added bacon fun
Prep Time - 10 min
Cook Time - 30 min
Total Time - 45 min

Ingredients
4 - 4 oz boneless, skinless chicken breast
1 tsp salt
1 tsp pepper
1 tsp chili powder
1 tsp garlic powder
1 tsp olive oil
1 garlic clove, minced
16 tbsp Original Bbq Sauce
1 tbsp. brown sugar
1 tsp apple cider vinegar
4 Bacon Slices, cooked (mine was leftover from breakfast, but if cooking now cook while chicken is roasting in the oven or on the stove)
4 tbsp. shredded Mexican blend cheese
Instructions
1.Preheat oven to 350
2.Line a baking dish with foil and spray with nonstick spray
3.In a small bowl combine salt, pepper, chili powder and garlic powder
4.Sprinkle spice mixture on both sides of each chicken breast and lay in the baking dish
5.Roast chicken for 20 minutes or until juices run clear
6.While chicken is baking in a small saucepan heat olive oil over medium heat for a few minutes and then add in minced garlic
7.Cook garlic for 1-2 minutes or until fragrant
8.Stir in BBQ sauce, brown sugar & apple cider vinegar
9.Cook over medium heat for 10-15 minutes or until sauce is reduced a little, flavors have come together and it is warmed through
10.Remove chicken from the oven and baste each chicken breast with BBQ sauce, I used quite a bit for each breast
11.Place 1 bacon slice on top of each breast (I cut each slice in half so they would fit easier)
12.Carefully place 1 tablespoon of cheese on each breast and return to the oven until cheese is melted completely and starting to brown on the ends
13.Remove and add more sauce if you would like
14.Serve & ENJOY!

Each chicken breast is 8 WW+ points
