Ingredients
- 1 cup (250 ml) chopped fresh cilantro or parsley
- 1 to 2 Tbsp (15–30 ml) Epicure Asian Stir-fry Seasoning
- 1 lime, juiced
- 2 Tbsp (30 ml) almond or cashew butter
- 2 Tbsp (30 ml) honey
- 1 lb (450 g) Asian rice noodles
- 2 bell peppers, thinly sliced
- 2 carrots, julienned
- 1/2 English cucumber, cut in half, seeded, and chopped
- 1–2 cups (250–500 ml) shredded cabbage
- 1–2 Tbsp (14–30 ml) vegetable oil
- Chopped almonds or cashews, for garnish – optional
- Chopped fresh mint, for garnish – optional
Instructions
1. For the dressing, in a blender, whirl cilantro with Asian Stir-fry Seasoning, lime juice, almond butter, and honey.
2. Rehydrate noodles in warm water according to package directions.
3. In a mixing bowl, add peppers, carrots, cucumber, cabbage, and rice noodles. Drizzle with dressing and oil. Toss to mix evenly. (If noodles are sticky, add 1–3 Tbsp (15–45 ml) hot water to loosen.)
4. Divide between bowls and top with almonds and mint.
