Loaded Smashed Potatoes


Loaded Smashed Potatoes

Serves 24

A fun "party" potato or a great side item

Prep Time - 10 min
Cook Time - 1 hr
Total Time - 1 hr

Ingredients
24 small potatoes, washed
1 tbsp. salt
1 tbsp. pepper
1 tbsp. garlic powder
1/2 cup reduced fat sour cream, divided
1/2 reduced fat shredded cheddar cheese, divided
1/4 cup chopped chives, divided
4 slices Fully Cooked Bacon, chopped

Instructions
1.Fill a large pot with water
2.Place potatoes into pot and place
3.Bring water and potatoes to a boil over medium-high heat and continue cooking until potatoes are tender when pierced with a fork
4.Remove potatoes from oven and let dry completely on a paper towel
5.Preheat oven to 400
6.Line a rimmed baking sheet with foil and spray with nonstick spray
7.Using a glass, potato masher or a measuring cup gently press each potato into a disk
8.Place each potato onto the prepared baking sheet
9.Spray the potatoes lightly with olive oil spray or nonstick spray
10.In a small bowl combine salt, pepper & garlic powder
11.Sprinkle spices over potatoes
12.Roast potatoes in the oven for 20-30 minutes or until they start to brown on the edges
13.Remove from oven and let cool for 5-10 minutes
14.Top each potato bite with 1 tsp sour cream, 1 tsp cheese a few bacon pieces and some chives or any other toppings you desire
15.ENJOY!!
