Garden Pizza


Garden Pizza
3 cups frozen Broccoli, Spinach or combination
1/8 cup water for veggies
1 -2 tablespoon water for sauce
3 tablespoons tomato paste
1/8 teaspoon stevia
1/8 – ¼ teaspoon sea salt
¼ teaspoon garlic powder or 1 clove minced
1teaspoon oregano, basil or Italian blend (1/2 for sauce, ½ for veggies) plus a sprinkle extra for top of cheese on pizza
1 store bought 12 inch frozen pizza crust (I used against the grain, G.F.)
2 cups mozzarella (1/2 cup optional parmesan)
Optional garnishes: fresh basil, extra virgin olive oil, crushed red pepper, more
grated parmesan

1)Steam veggies and water in a medium pan with cover for 5 minutes. Check and stir and add ¼ teaspoon salt and ½ teaspoon herb, garlic)
2)If using broccoli, as it cooks, break into smaller pieces with utensil. Cook until liquid is evaporated.
3)In a small bowl, add tomato paste, stevia, ¼ teaspoon salt, water (1 tablespoon at a time to reach desired consistency)and ½ teaspoon herb, stir to combine.
4)Spoon sauce on crust almost to edge
5)Mound veggie on top and spread evenly
6)Top with cheese then a bit more herb
7)Bake according to crust directions

Garnish with fresh basil, drizzle of extra virgin olive oil and/or crushed red pepper flakes.
