Pineapple Coconut Banana Smoothie



 Pineapple Coconut Banana Smoothie. 

What a great way to spend a summer 

evening delighting with a refreshing drink 

that bring your mind to a tropical holiday.

Pairing banana with fresh pineapple and coconut is definitely a good way to achieve this. I also added some lime juice to bring a bit of citrus flavor and create a perfect balance between tart and sweet.. mmm.. feel already in the Tropical Paradise.
This creamy smoothie, can also be a great way to start your day and serve it  for breakfast.
This drink is high in saturated fats because of the coconut, but don’t worry, it’s a good saturated fat. It seems that not all saturated fats are bad.  The plant-based saturated fats as in coconut, may have a neutral or even positive effect on cholesterol as compared to animal-based saturated fats. Just make sure to use the right coconut milk that is organic and has no guar gum or other additives, or even better make it your own.

Pineapple Coconut Banana Smoothie

Ingredients
Makes 2 servings
  • 1/2 cup coconut milk
  • 1/2 cup plain or vanilla yogurt
  • 1 medium banana
  • 1 cup chopped pineapple
  • 1/4 cup shredded coconut
  • 1 tsp vanilla extract 3/4 cup ice
  • 1 tbsp honey 2 tbsp lime juice
Directions
1. In a blender, place all ingredients, cover and process until smooth.
2. Pour into chilled glasses and serve.
