*BETTER than Sushi with a Redneck twist!
2 boneless skinless chicken breasts - sliced in half & pounded flat
2 large jalapeno peppers - cut stem off, cut in half, remove seeds
1 cup rice - cooked per package directions (we used Sushi rice)
Salsa
16 slices of bacon
Heat oven to 375°. Lay out 4 strips of bacon side by side (you want them to cover the chicken once it's assembled) Fill the jalapeno with cheese and then wrap the chicken breast around it.
Next, mix salsa in rice to desire consistency but NOT runny. Place chicken on bacon and pat the rice mix around the breast (be sure to put rice between the chicken and bacon). Wrap bacon around the chicken andd rice, overlapping the ends of the bacon. Lay the top side (end strips of bacon) DOWN. Cook to an internal temp of 165. Approximately 45 minutes. We cooked in a gas stove which cooks hotter and faster.
Serve whole, or slice and serve strip sections. If you have a very sharp knife, you can make the slices look like sushi.
