It's all in the stuffing...you can use this with pork chops or chicken breasts, this is also a great way to get some veggies into your next family dinner.
Stuffed Chops (or Chicken)
Serves 4
A great stuffed chop (or chicken) recipe that is full of flavor, fun and lower in points.
Prep Time - 15 min
Cook Time - 45 min
Total Time - 1 hr
Ingredients
4 - 4 oz lean, center cut pork chops
2 tsp salt
1 tbsp pepper
1 tbsp garlic powder
1 tbsp chili powder (optional)
1/2 cup reduced fat blue cheese
1/4 cup roasted red peppers
1 cup chopped spinach (frozen or fresh) - if using frozen make sure to thaw out and squeeze out excess water before stuffing
2 cup no fat chicken stock, divided
1/2 cup apple juice (optional)
2 tsp cornstarch
2 tsp water
Instructions
1.Preheat oven to 350
2.Using a large nonstick, oven safe skillet, spray it with olive oil spray, preheat pan over medium heat
3.Pat dry the pork chops
4.Using a very sharp paring knife cut a slit into the center of each pork chop, making sure to not cut through the chop but cutting a large pouch to hold the stuffing mix
5.Season chops with salt, pepper, garlic powder & chili powder (if using) on both sides
6.In a small bowl combine blue cheese, red peppers & spinach
7.Stuff 1/4 of the mix into each pork chop filling it up as much as possible
8.Place chops into the preheated skillet and let each side brown, 4-5 minutes per side
9.Pour 1 cup of chicken stock into the skillet and place in the preheated oven
10.Cook in oven for 25-30 minutes or until cooked through
11.Remove pan from oven and place chops on a plate to keep warm
12.In a small dish mix together cornstarch and water until smooth
13.Add in remaining chicken stock and apple juice, if using, to the pan and place over medium heat
14.Whisk in cornstarch mixture and bring mixture to a boil, stirring constantly, until it thickens to a loose gravy
15.Taste and adjust seasonings as necessary
16.Serve gravy over chops immediately and ENJOY!!
