I really like the omission of mayo but since I don’t like greek yogurt, what about just an oil and vinegar dressing?

1 cucumber
handful of cherry tomatoes
Juice of one lime
1/4 of red onion
Salt
Cilantro or parsley (whichever you prefer)
Cut everything up, toss it in, salt to taste and that’s it!
There’s many versions of this where you can also add some greek yogurt to make it creamier as well
