Chicken Fajita Soup

A slow cooker soup that will become a favorite...Chicken Fajita Soup!!


Chicken Fajita Soup
Serves 8

A slow cooker soup that gives you all the flavors of fajitas without the guilt and hassle

Prep Time - 10 min
Cook Time - 7 hr
Total Time - 7 hr

Ingredients
1 lb boneless, skinless chicken breast
30 oz canned black beans, rinsed and drained
10 oz frozen corn
1 cup salsa verde
1 tbsp. cumin
1 tsp pepper
1 tsp chili powder
3 cups no fat chicken stock
4 corn tortillas, torn into small pieces
1 cup reduced fat Mexican blend cheese

Optional Toppings
Sour Cream
Fresh Cilantro
Avocado
Cheese
Tortilla chips

Instructions
1.Place chicken breast in a large slow cooker
2.In a large bowl combine black beans, corn, salsa, cumin, pepper, chili powder, chicken stock & tortillas
3.Pour beans mixture over chicken
4.Cook on low for 6-7 hours, or high for 3-4 hours
5.Remove chicken and shred
6.Add in cheese and stir to combine
7.Add chicken back in and let cook for another 20-30 minutes and then serve
8.Top with any additional toppings you prefer
9.ENJOY!!
