Do you have berries on the brain? This strawberry bread will cure all your berry wants! (Not a diet food. TREAT only in moderation!)
Strawberry Bread
A moist, berry filled bread perfect for your next afternoon snack.
Prep Time - 10 min
Cook Time - 35 min
Total Time - 45 min
Ingredients
1/2 cup butter. softened
1/2 cup brown sugar
1/2 cup white sugar
4 ounces cream cheese, softened
2 eggs
1 tsp vanilla extract
2 cups flour
2 tsp baking powder
1/2 tsp baking powder
1/2 tsp salt
1/2 cup low fat buttermilk
1 1/2 cups strawberries, rinsed & chopped
Instructions
1.Preheat oven to 350
2.Prepare a mini loaf pan (with 6 mini loaves) or 2 9x5 loaf pans with non-stick spray
3.Using an electric mixer, beat butter, sugars and cream cheese until fluffy
4.Add eggs in one at a time
5.Add in vanilla
6.In a separate bowl mix flour, baking powder, baking soda & salt
7.Add flour mixture to butter mixture until just combined
8.Add in buttermilk mixing until just combined, making sure to not over-mix
9.Carefully fold in chopped strawberries, dough will be very thick
10.Divide mixture evenly among desired pans
11.For mini loaves bake for 30-35 minutes, or until toothpick inserted into the center comes out clean
12.For large loaf pans bake for 50-60 minutes or until toothpick comes out clean
13.Let cool for 5-10 minutes and then serve
14.ENJOY!!
