Stuffed Chicken Breasts


4 Chicken Breasts
1 Onion
1 cup of mushrooms
1 cup of fresh brocolli
Shredded Cheese (I used Mozzerella)
Cream Cheese (I used 3 Laughing Cow Wedges)
4 Slices of Bacon

Saute the onions in a skillet until carmelized.
Add mushrooms and brocolli
When veggies are cooked add cheeses and stir well

Meanwhile, slice halfway through the top of each chicken breast
Fill each breast with filling
Bake at 350 until done
Top off with a slice of bacon and cheese and bake til melted
